Our star of the season carries on with this delicious Heirloom tomato recipe. Wanting to quench that sweet tooth without sacrificing your regime then this is the salad you want! With the scrumptiously sweetness of the tomatoes your sweet tooth will definitely be satisfied. 

Serves 2

70g Cavolo Nero
200g Sliced Mixed Tomatoes
110g Diced Cucumber
1 Diced Green Bell Pepper
1 Long Red Pimenton
100g Butterbeans
120g Roasted Cherry Tomatoes
1 Tbsp. of Fresh Oregano
½ Sliced Green Chilli
Salt & Pepper to Taste
Mustard Grain Dressing 

1/3 Cup Olive Oil 
1 Tbsp. Honey
3 Tbsp. Grain Mustard
¼ Cup White Vinegar
Salt & Pepper to Taste 


1. First, prepare the grain mustard dressing. whisk together the white vinegar, honey, grain mustard, salt & pepper together and whisk until smooth
2. Add olive oil slowly and whisk together
3. Next, put the cherry tomatoes on a tray, sprinkle a little olive oil and salt. and out to roast for 15 mins
4. While cherry tomatoes are roasting, put the rest of your veggies in a bowl.
5. Once your cherry tomatoes are done, add to the bowl and mix.
6. Top it off with the oregano and grain mustard dressing.
7. Mix thoroughly once more and enjoy!
